South Wind salmon carpaccio

1 tablespoon – mustard

½ tablespoon – sugar

1 tablespoon – oranje juice

1 tablespoon – lemon juice

½ tablespoon – vinegar

2 tablespoon – Olive oil

Salt and pepper

½ – red onion 

3 leaves – hydroponic lettuce

Salmon Carpaccio with Mustard Sauce

Instructions:

1. For the sauce: in a bowl, mix mustard, sugar, olive oil, orange juice, lemon juice, vinegar, salt and pepper at your taste.
2. Sprinkle the sliced red onion and the sauce above the salmon.
3. Garnish with lettuce leaves and finally sprinkle the chives and Parmesan cheese over the South Wind Salmon Carpaccio.

* Serve with toasted bread and black lumpfish caviar.
