Ingredients

500 g South Wind Trout
½ kg – Cooked and diced potatoes
½ cup – cherry tomatoes cut in halves
boiled eggs cut into wedges
½ – Thinly sliced red onion
½ cup – Green olives
½ cup – Mayonnaise
2 tablespoons – Lemon juice
2 tablespoons – Olive oil
2 tablespoons – Finely chopped parsley
Salt and pepper

Smoked Trout Salad

Instructions:

1. Mix in a bowl: potatoes, tomatoes, eggs, onions and olives.
2. Mix in another bowl the mayonnaise, lemon juice, olive oil, parsley and then put the mix over the potatoes.
3. Add the cut South Wind Smoked Trout and season.
