Ingredients

4 South Wind fresh Salmon portions
2 Tablespoons – Butter
½ orange – Orange juice
1 – Carrot
1 – Zuchinni
½ tray – Mushrooms
½ package – Bean sprouts
2 Tablespoons – Honey
1 Tablespoon – Soy sauce
Coriander (for garnishing)

Baked salmon with sauteed vegetables

Instructions:

1. In a griddle or hot pan seal the portion of salmon on both sides. Then finish cooking in the oven with a little butter and orange juice for 6 minutes.
2. Cut carrots, zucchini and mushrooms in slices . Heat a wok with olive oil and butter and saute the mushrooms for 2 minutes. Then add the carrots and zucchini for 2 minutes. Finally add bean sprouts and saute for 1 more minute.
3. For the sauce, heat two tablespoons of honey with a tablespoon of soy sauce. Spread over sauteed vegetables.
4. Finally , in the center of the plate, place sauteed vegetables, and over them place the grilled salmon. Finally garnish with fresh coriander leaves .
