Ingredients

For 3-4 people:

2 trays – Mussels with herbs
3 cups – Couscous
1/2 – Red bell pepper
1/2 – Green bell pepper
1/2 – Yellow bell pepper
3 cups – Boiling water

Instructions:

1. In a bowl add couscous and boiling water. Cover for 5 minutes until its done.
2. Chop the peppers into small cubes and mix with couscous, oil, a squeeze of lemon, salt and pepper.
3. Prepare Mussels with herbs in microwave as directed on the container.
4. Finally, garnish with coriander leaves.
