100 g – South Wind Scallops Carpaccio
½ – Cucumber
½ – Tomato
½ – Spring onion
½ – cup Coconut milk
½ – cup Lemon juice
3 – tablespoons olive oil
2 – Lettuce leaves
Salt and pepper to taste

Scallop Carpaccio Tahitian Style

Instructions:

1. Wait for the South Wind Scallops Carpaccio to defrost on a plate.
2. In a bowl, mix the coconut milk, lemon juice and olive oil, add salt and pepper and set aside.
3. Over the scallop carpaccio add the diced cucumber, diced tomato, sliced onion and then add the mix from the bowl.
4. Garnish with lettuce leaves.
